Healthy Fruit salsa with cinnamon sugar chips


Sweet and healthy at the same time, this fruit salsa is made with fresh fruit and scooped up with a crunchy homemade pita chip. Grab yourself some strawberries, mango, kiwi and and a big bowl and get ready to make this easy dessert!

Ingredients
Cinnamon chips:

  • 6 10" flour tortillas
  • 1/4 cup sugar
  • 1 tsp cinnamon
  • Olive oil spray
  • Fruit salsa:
  • 1 granny Smith apple
  • 1/2 cup diced honey dew melon
  • 1/2 lb strawberries
  • 1/2 lb raspberries
  • 1-2 tbs preserves (I used raspberry)
  • 1 lemon

Steps

  1. Preheat oven to 350°. Combine cinnamon and sugar, set aside. Working with 3 tortillas at a time, spray both sides of tortillas and sprinkle each side lightly with cinnamon sugar. Stack 3 tortillas and cut into wedges. Spread them out on a baking sheet and bake 10-12 minutes.
  2. Zest lemon and set aside. Peel and finely chop apple, squeeze 1 tsp lemon juice over apples and stir.
  3. Finely chop strawberries and melon, add to bowl with apples. Then add raspberries, preserves, and how ever much lemon zest you want. Stir well to combine.
